Apple Cider Pulled Chicken Burger with Blue Cheese and Carmelized Onions

I’ve never been all that fond of burgers. The thought of big chunks of bread in my mouth and fillings that are often below expectations, isn’t one that gets me too excited. On this occasion though, I decided to indulge a little craving and do a some experimenting. This recipe was inspired by a YouTube video I saw from the guys at SORTEDfood. You can check them out here. They’ve got some fantastic recipes and are great fun to watch!

Anyway, getting back to the recipe. It turned out lip-smackingly good and I barely noticed all the bread! If you’re planning something special, or just feel a little adventurous, then this burger is perfect for you.

Apple Cider Pulled Chicken Burger with Blue Cheese and Carmelized Onions

Ingredients

  1. 2 Burger rolls
  2. 1 Cup shredded roast chicken
  3. 1/3rd Cup Apple cider
  4. 1 Teaspoon mustard
  5. Chili flakes (to taste)
  6. Chicken stock (depending on consistency)
  7. 2 Large onions (the red onions most commonly available in India can be tiny)
  8. Rosemary sprigs
  9. Salt
  10. Freshly ground black pepper
  11. Blue cheese (crumbled into bits)
  12. Lettuce
  13. 1/2 glass of red wine (optional)
  14. A tablespoon of butter
  15. 2 Teaspoons of olive oil

Directions

Step 1: In a bowl, mix together the apple cider, mustard, chili flakes, and rosemary until thoroughly combined. Stir into the shredded chicken and cook until the chicken is heated through. Season generously with salt and black pepper. If the chicken is a little dry, pour in a little stock. Remove from heat and reserve.

Step 2: Chop the onions into slices and add them to a pan with melted butter and some olive oil (this prevents the butter from burning). Season with a pinch of salt and a little sugar. Make sure the lid is on so that the onions sweat and caramelize. De-glaze the pan with half a glass of red wine and reduce till the onions form a chutney-like consistency. Now you’re ready to assemble the dish!

STEP 3: Lightly butter both sides of your bread and lay some lettuce over the bottom. Add a generous portion of the chicken, top with some of the caramelized onions, and a few dollops of blue cheese (less is more here, this stuff can get real nasty when there’s too much of it). Then balance the other half of the bun on top, and serve with some fries or wedges on the side. Et voilà! Bon Appétite!

    Looks great! Although to be authentic, you really should have made the picture of it much, much messier. Pulled BBQ sandwiches need to be piled high and sloppy and thrown down on a torn piece of brown paper with splatters everywhere and a big honkin’ pile of slaw or potatoes just slammed down next to it. And pickles! Don’t forget the pickles!!
